The new Outlook app (from Microsoft) is nice and I've started using it. I used to keep everything in my Inbox, but there is a way to easily 'Archive' messages to another folder from within the Outlook app. So I created an Archive folder in my mailbox and have started to move everything there after I finish with it. It's just a subfolder of Inbox.
If your Outlook settings are configured a certain way, you won’t be able to send emails if you’ve opened or clicked on them after you’ve clicked send, i.e. If you’ve marked them as read from the outbox. One potentially frustrating aspect of Microsoft Outlook 2016 (and earlier versions) is that it doesn't mark a message as read until you've changed your selection. This may not be fast enough for.

I then created a little Quick Action in Outlook on my computer to take a message mark as read and move to Archive when I'm done. This way, even if the message isn't left as unread, I will review it again if it's still in the Inbox folder. This might be another good way to do it, and you can use the new Outlook app, which is free.
